i thought i'd stop by to post a quick recipe: whole wheat oatmeal pancakes. this is something i've been thinking about for a while. a few tweaks later and it's the perfect healthy pancake for sylvie's dinner. one batch makes approximately 24 silver dollar pancakes. they freeze very well and can be reheated in a low oven or microwave.
WHOLE WHEAT OATMEAL PANCAKES
1 egg
1 1/4 cup milk
2 tablespoons oil
1/2 oats (quick cook or regular)
1 cup whole wheat flour
1 teaspoon sugar
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
pinch of salt
1. whisk together the egg, milk and oil. if using regular cook oats, let them soak in the milk mixture for 15 minutes.
2. whisk in the whole wheat flour, oats (if using quick cook), sugar, baking powder, cinnamon, vanilla, and salt until just combined. let the mixture sit for about 10 minutes while your pan or griddle heats up.
3. heat your pan over medium high heat. i used my electric griddle set to 400 degrees. if your pan is non-stick there is no need to grease it. use a large spoon to drop the batter into the pan. i aimed for circles about 2-3 inches in diameter. when the tops bubble after a minute or 2, flip. cook until set. serve immediately or freeze for later.
these are delicious. they are the best healthier pancakes i've ever had. light, fluffy, but with a little bit of texture!
Wheat pancakes are my FAVORITE. I hate syrup, though. Lol

I LOVE syrup. Like the straight-up fake stuff out of the lady shaped bottle.
